1. Alu Matar


This is quick and easy to prepare the wholesome vegetable dish. If you are in a hurry, this is a dish you can make in a pressure cooker and it goes well with Rotis, Pooris, Parathas and especially the Peas Pulao (the recipe for which is right below!). For this, you need to heat oil in a wok or pressure cooker and put cumin seeds in it. When they splutter, put in chopped onions and fry till they are soft. 

After this, add ginger and garlic pastes and fry for a few more minutes. Then, put in chopped tomatoes, coriander powder, cumin powder, turmeric powder, and chili powder and sauté for a few more minutes till the oil separates from the masala. After this, add the sliced potatoes and shelled peas and sauté for one minute. Then put in a cup of water. If you are cooking in a pressure cooker, this is the time to put the lid on and cook for about 4-5 minutes. If you are cooking in a wok, simmer till the potatoes soften. After the potatoes are done, turn off the heat and sprinkle coriander leaves. Serve it hot.

2. Peas Pulao (Yellow Rice)


This dish is easy to prepare and perfect for days when you want something more special than plain boiled rice. Though Peas Pulao is best when made with Basmati Rice, other kinds of rice too will do well. For this, you need to set aside the rice soaked in water for at least 20 minutes before starting cooking. In a deep bottomed wok, heat oil or ghee. Put in chopped onions and after they turn soft, throw in the shelled peas. Sauté for 2 minutes. 

After this, clean the rice in running water and pour it in the wok. Cover the rice with enough water (not too much) and then put on a lid. Turn on the heat high and when it starts boiling, put in salt to taste and slow down the heat to a simmer. When the water almost disappears (but the rice is not fully cooked), pour in about half a cup of warm water into the wok and let the whole thing simmer for about 5 minutes. Then turn off the heat and let it stay as it is for 10 minutes. Serve hot.
